Vietnamese Braised Beef with Ginger and Star Anise, Herbed Jasmine Rice, and Housemade Carrot & Daikon Pickles

This a recipe handed down from my grandmother who created this comforting braised beef that simmers for hours in a delicate ginger and star anise broth. Our family would make this dish to accompany the Vietnamese traditional steamed savory rice glutinous cake (“Bánh Chưng”) served during the Vietnamese new year (“Tết”). I love making this dish with the awesome fragrance of the ginger and star anise stewing! It’s really a perfect dish for a cold night!
