“Paitan” style ramen is characterized by the rich and creamy broth traditionally made with pork but turkey works beautifully! We use loads of roasted turkey bones to create a thick and deep brown broth that is absolutely delicious with a touch of miso to bath the ramen noodles and top with crispy hand shredded turkey and a slow-cooked egg. An awesome noodle soup for the chilly weather!
