Spring Vegetable Soupe au Pistou
This Provençal soup (“Soupe au Pistou”) is a broth-based vegetable soup originating from Provence with a distinctive influence from its Italian neighbor to the south. This refreshing and nourishing soup incorporates vegetables such as green beans, peas, carrots, yellow squash, and zucchini with an irresistible sauce “pistou” made from garlic, fresh basil, and olive oil. While similar to the Italian pesto, pistou is made without pine nuts. This soup has all the great flavors of spring in a bowl!
