The French cooking term “à La Nage” means “in the swim” and “nage” refers to the broth used to poach seafood. In this flavorful dish, we poach a salmon filet with coconut milk, lemongrass, a little fish sauce, lime juice, and other aromatics such as ginger and fresh herbs. The richness of the broth is served the salmon, rice noodles, and steamed bok choy.
