This is a delicious and comforting soup to RESET your body after “some” overindulgence during Thanksgiving! We created this soup with oodles of somen noodles to soak up a rich broth of fermented miso that’s full of good bacteria, roasted tofu with a touch of sriracha, loads of winter vegetables like kale and shiitake mushrooms, and aromatics like ginger to bring your body back on track without comprising flavors!
Tofu is a good source of protein & contains all nine essential amino acids, iron, calcium, manganese & phosphorous.
Bok choy is full of phytonutrients like vitamin A lutein, zeaxanthin that are beneficial for vision. The dietary fiber in bok choy also provides support in cardiovascular health and digestion
Mushroom contains B vitamins as well as a powerful antioxidant called selenium, which helps to support the immune system and prevent damage to cells and tissues.
