This vegan version is a flavorful and hearty meal that is the epitome of comfort food combining rice and vegetable enveloped in a rich tomato broth.

Rice is low in fat and high in starchy carbohydrates. It is packed full of vitamins and minerals and provides an excellent source of vitamin E, B vitamins (thiamin, niacin) and potassium.

Eggplant contains great amount of fiber and is a great source of antioxidants.

Zucchini has ample vitamin A which supports your vision and immune system.

Yellow Squash is high in vitamins A, B6, and C, folate, magnesium, fiber, riboflavin, phosphorus, and potassium.
