Of Spanish origin, “escabeche” is a cooking technique where meat or fish is first seared than cooked in an acidic marinade resulting deep, robust sweet-sour-savory flavors. Our Cod Escabeche is seared than cooked in a mixture of olive oil, bell peppers, onions, tomatoes, carrots, jalapeños, cider vinegar, and allspice berries.
