This is a great vegetarian version of our Miso-Sake-Ginger Salmon that offers all of the wonderful combination of texture and flavors and exudes that awesome salty-sweet-umami balance. The sweet potatoes are oven roasted with a glaze of white miso, sake, ginger, and mirin, and served with soba noodles that are nutty and an exotic mix of Japanese mushrooms and sautéed bok choy!
