Oven-Roasted Sweet Potatoes with Miso-Sake-Ginger, Sesame Soba Noodles, Mixed Japanese Mushrooms, and Bok Choy

This is a great vegetarian version of our Miso-Sake-Ginger Salmon that offers all of the wonderful combination of texture and flavors and exudes that awesome salty-sweet-umami balance.  The sweet potatoes are oven roasted with a glaze of white miso, sake, ginger, and mirin, and served with soba noodles that are nutty and an exotic mix of Japanese mushrooms and sautéed bok choy!

Sweet potatoes are a natural and abundant source of beta-carotene and vitamin A which are essential for supporting cells growth and immune functions.

Mushrooms contain B vitamins as well as a powerful antioxidant called selenium, which helps to support the immune system and prevent damage to cells and tissues.

Sesame Seeds rich source of B vitamins, vitamin E, magnesium, iron.

Soba Noodles is high in soluble fiber and manganese and thiamin.

Bok Choy is full of phytonutrients like vitamin A lutein, zeaxanthin that are beneficial for vision. The dietary fiber in bok choy also provides support in cardiovascular health and digestion.
