Japchae is a popular Korean dish made with sweet potato starch “Korean glass noodles” that have a unique springy and chewy texture and a great sesame-soy-rice wine sauce to create a balanced flavor of sweet, salty, and nutty. This vegan version works beautifully with a medley of crispy vegetables, braised tofu, and earthy “meaty” king oyster mushrooms for a delicious and satisfying comfort dish.
