This month’s French free-form tart with home-made herb crust is inspired by the flavors of the traditional Provencal dish of colorful stewed vegetables. This galette holds layers of roasted eggplant, zucchini, yellow squash, red bell peppers, tomatoes, onions, and garlic with parmesan and fresh herbs, and topped with our signature carrot top pesto. This is a wonderful tribute to the bounty of farmers markets.
