Your meal will be available for pick up on Wednesday, Feb 3rd

Your chef-prepared meal will be ready for pick up on Wednesday, February 3rd – fully cooked and prepared so you can heat it up for dinner that night or freeze to enjoy later in the week. Pick Up 4-6pm at Bath Tub Row Brewing Co-op, Los Alamos.

Roasted Green Chile Bisque

The smell of green chile is always so comforting here in New Mexico. We will be preparing the beloved combination of roasted local green chile with onion, garlic, and olive oil  into a creamy delicious bisque!

Slow Roasted Thai Red Curry and Tamarind Pork in Banana Leaves

served with Herbed Jasmine Rice and Braised Bok Choy

Banana leaves are widely used for cooking and serving food in Asia, Africa, and South America. For this flavorful pork dish, we drew inspiration from the traditional Mexican slow-roasted pork dish “Cochinita Pibil” from the Yucatan.  For an Asian-Mexican fusion twist, we substituted the red annatto seed paste with Thai red curry paste and the acidic citrus juice (lime, blood orange, lemon) with sour tamarind and coconut milk. We also added Asian herbs such as lemongrass.  The result is fabulous!  We think you’ll love it. The banana leaves add a unique flavor as the pork is roasted in low oven temperature for over 5 hours!

Filipino-Style Chicken Adobo with Hard Boiled Egg

Filipino chicken adobo is one of the most popular dishes in the Philippines and made even better when served with hard boiled eggs. The Spanish word “adobo” means “marinade” or “pickling sauce.” Like many warm climate cultures, indigenous Filipino cuisine uses vinegar as cooking methods to preserve food. The Filipino style adobo is prepared with vinegar, soy sauce (introduced by Chinese traders), garlic, ginger, and whole peppercorns.  The marinade helps transform the texture of the chicken, leaving it soft, tender, and juicy. The taste is complex but well balanced, with salty, sweet, sour, and spicy notes.

Cod Escabeche with Vegetable served with Confit Potatoes

Of Spanish origin, “escabeche” is a cooking technique where meat or fish is first seared than cooked in an acidic marinade resulting deep, robust sweet-sour-savory flavors.  Our Cod Escabeche is seared than cooked in a mixture of olive oil, bell peppers, onions, tomatoes, carrots, jalapeños, cider vinegar, and allspice berries.

Simple Syrups

These handcrafted, all-natural syrups are made with organic cane sugar & either fresh organic ginger, organic hibiscus, or organic lemongrass. You can use these as a cocktail mix by adding to vodka, gin, tequila, rum, or sparkling wine. Or, make it a “mocktail” using seltzer or soda water or add some flavor to an iced tea – whatever suits your fancy! Each 12 oz jar of syrup can be used to make approximately 10 to 15 cocktails or mocktails.

You can also get creative and use our syrups in your recipes. Inject into layers of cake before you add your icing. Use them when you poach fruits like pears, apples, or peaches or add a drizzle to your fruit salad. Create marinades when baking or grilling fish or meat.
