Cajun cuisine is known for its spicy, flavorful notes and heartiness. This style of cuisine is heavily influenced by peasant-style French cooking. Influences from the Spanish, Native Americans, and African-Americans also played a key role in making Cajun cuisine. In this class, we will be making classic Cajun dishes – Cajun corn gratin, Mardi Gras Jambalaya, Cajun Blackening Spice salmon, and white chocolate and cherry bread pudding.
