Join Open Kitchen for a Culture and Culinary Journey and Taste the French Influences on Vietnamese Cuisine
Franco-Vietnamese relations started as early as the 17th century with the arrival of Catholic missionaries in Vietnam. France eventually colonized Vietnam from 1887 to 1954. French colonialism left its mark on Vietnamese cuisine with the introduction of ingredients such as onions, white potatoes, and asparagus; staples such as coffee and baguette; and cooking techniques such as baking, making broths and crepes, and sautéing. Join Open Kitchen’s Chef-Owner Hue-Chan Karels and learn how the Vietnamese absorbed French culinary influence — not accepting it as-is, but rather integrating these new additions in their own way, tailoring the ingredients to their way of eating and cooking.

A hybrid dish (“cua” means “crab” in Vietnamese, and “farci” means “stuffed” in French), this deviled crab dish with shiitake mushroom and glass noodles is enriched by butter and uses fish sauce to amplify the brininess of the crustacean (df)

Bò Lúc Lắc
“Shaking Beef” is French-inspired wok-seared sweet-and-savory beef served on a bed of watercress with cucumber, tomatoes, pickled onions, and tangy lime dipping sauce (gf)
Cà Phê Sữa Đá
Vietnamese iced coffee with sweetened condensed milk (gf, v)
What to Expect: This is a hands-on, engaging, and intimate cooking class. You will have the opportunity to cook alongside Open Kitchen Chef Team, dine on all the dishes you’ve made, and have fun. You will experience a memorable day at Open Kitchen among a community of friends with recipes to take back to your home kitchen.
*Baguette & Beyond Cooking Class is a publicly offered event. At Open Kitchen, we follow the related rules and regulations regarding COVID-safety. The cooking classes are limited in the number of guests so we can provide the recommended space and safe environment for everyone. The maximum guests for this cooking class is 16 people. Baguette & Beyond Cooking Class is $115 plus tax per person
All guests will be required to show proof of vaccination upon checking in. For those who are not vaccinated, we will also accept proof of negative results from a COVID-19 test taken within 48 hours of the event. Photos may be taken by Open Kitchen during class/event. Unless you explicitly make a request to Open Kitchen not to be photographed, Open Kitchen has full consent to take photographs while you are on our premises. Open Kitchen has full and unrestricted rights of these photographs. *Registered Events are non-refundable unless related to COVID and Health-related issues – we will hold a credit for 60 days.
