* Creamy Roasted Cauliflower & White Bean Soup
Pairing: Bonnet Huteau ‘Nuit Boreale”, Muscadet, France NV. This Sparkling wine from the Loire Valley in France is wonderful pairing to fall dishes. Made in the Champagne methode and aged extensively on the lees, its rich and complex body mingles very well with creamy soups. Enough acid and structure to highlight all the spices and cleanse the palette getting you ready for the next bite!

*Stone Fruit Galette
Pairing: 2018 Larchago Blanco, Viura, Rioja, Spain. Aromas of white fruit and peaches combined with white flowers and tropical notes. Clean and powerful on the palette with a silky smooth long finish. stainless steel fermented and and quite easy to drink!

*New Mexico Spiced Pan Roasted Salmon
Pairing: 2018 Green Quartz, Sauvignon Blanc, Casablanca Valley, Chile. Grown in cool coastal vineyards 10 miles from the Pacific Ocean, this wine possesses a clean saline-minerality and burts with bright citrus notes. Grown on sustainable vineyards with a huge deposit of quartz soil. Fresh and lively, a great accompaniment to any fish dish.

*Ancho Citrus Braised Short Ribs
Pairing: 2009 Izarbe Reserva, Rioja, Spain
Izarbe in native Basque language means ‘under the stars’. Grown from grapes selected one cluster at a time from 75 + year old vines. Aged 18 months in French and American oak, 18 months in the bottle after that. Elegant, balanced and smooth with beautifully integrated tannins and spiced red fruit. If this wine was to be compared to a human, it would be the beautiful and elegant Salma Hayek
